Banana Breakfast Club with Peanut Streusel A breakfast club with banana and a peanut streusel topping.
1/4 cup packed brown sugar,
1/4 cup old fashioned oats,
2 tbsp. all-purpose flour,
2 tsp. + extra ground cinnamon,
1/4 cup creamy peanut butter,
1 pkg. (8 oz.) cream cheese, softened,
1/4 cup granulated sugar,
1 tsp. grated lemon peel,
2 tbsp. fresh lemon juice,
1 tbsp. vanilla extract,
6 egg(s), beaten,
1/3 cup milk,
12 slices white or egg bread,
3 to 4 DOLE® Banana(s), sliced 1/4-inch thick,
optional maple syrup,
Step 1: For the peanut streusel, combine sugar, oats, flour and cinnamon. Add peanut butter; work into mixture using two forks or your fingers, until blended and crumbly.
Step 2: Blend cream cheese, sugar, lemon peel, lemon juice and vanilla in medium bowl.
Step 3: Beat together eggs and milk in large flat dish.
Step 4: Spread 1-1/2 tablespoons cream cheese mixture on each slice of bread. Top one slice of bread with sliced bananas. Place second slice of bread with cream cheese spread side down on bananas. Repeat process for remaining bread. Spray two 13x9-inch glass baking dishes with nonstick cooking spray.
Step 5: Dip sandwich in egg mixture, turning to coat on each side. Place 3 sandwiches in each dish; sprinkle with cinnamon. Sprinkle 2-1/2 tbsp. streusel topping over each sandwich.
Step 6: Bake at 375 F. 25 minutes or until heated through. Let stand 5 minutes; slice in half, serve with maple syrup if desired.
