Arugula, shrimp, almonds and tomatoes with a raspberry vinaigrette.
2 oz. DOLE® Arugula,
5 cooked shrimp,
1/4 oz. toasted almond,
3 cherry tomatoes, cut in half,
Raspberry Vinaigrette (recipe below),
Step 1: Arrange arugula, shrimp, almonds and tomatoes on a plate. Drizzle with Raspberry Vinaigrette as desired.
Step 2: Raspberry Vinaigrette: Combine 1/2 cup DOLE Chef-Ready Raspberry Puree, 1/4 cup olive oil, 1 oz. lemon juice, and 1/2 oz. honey in blender container. Cover; blend until smooth. Season with salt and pepper, to taste.
