Ingredients 5


2 oz. DOLE® Arugula
cooked shrimp
1/4 oz. toasted almond
cherry tomatoes, cut in half
  Raspberry Vinaigrette (recipe below)



2 oz. DOLE Arugula

5 cooked shrimp
1/4 oz. toasted almond
3 cherry tomatoes, cut in half


Arrange arugula, shrimp, almonds and tomatoes on a plate.  Drizzle with Raspberry Vinaigrette as desired.



Raspberry Vinaigrette: Combine 1/2 cup DOLE Chef-Ready Raspberry Puree, 1/4 cup olive oil, 1 oz. lemon juice, and 1/2 oz. honey in blender container.  Cover; blend until smooth.  Season with salt and pepper, to taste.
